Stuffed Mini Peppers

These Stuffed Mini Peppers are the perfect crowd pleasing appetizer! They’re stuffed with two kinds of cheese, bacon, and more, then baked till melty and delicious!

This recipe will make a dozen stuffed peppers, so if you’re feeding a crowd and want more than that, just double the recipe. 

INGREDIENTS

  • 1 pound mini sweet peppers, halved and seeded
  • 2 tablespoon extra virgin olive oil
  • Salt and pepper
  • 12 ounce log goat cheese softened 
  • 2 tablespoon Mascarpone cheese
  • ¼ cup bacon crumbles, Bacon Bits work
  • 1 tablespoon Everything But the Bagel seasoning
  • 2 teaspoon Lemon zest
  • ½ Lemon, juiced 
  • 2/3 cup grated parmesan 
  • 1 tablespoon Butter

INSTRUCTIONS

Preheat the oven to 425F*.

Cut each in half, remove seeds. 

Place on a pan and spray/drizzle with the olive oil and salt and pepper. 

Baked for 8 minutes. Then let cool. 

In a large bowl, stir to combine the goat cheese, parmesan, mascarpone, garlic, bacon bits, seasoning, lemon zest and juice and black pepper.

Fill the cut peppers – you should have just enough filling to fill the peppers with a generous amount, coming slightly over the tops of the peppers.

Melt butter and stir in parmesan cheese. 

Sprinkle parmesan mixture over the top of each pepper. 

Roast the peppers for about 20-25 minutes, until the peppers are soft and the cheese is golden on the edges.

Get Yourself a Husband Bacon

If you’ve ever been to First Watch, you may have seen Million Dollar Bacon on the menu. This recipe is inspired by that recipe but with a twist! This Candied Bacon recipe is sweet and salty, with a kick of heat. Crispy, thick-cut bacon caramelized with a little bit of spice is a perfect pairing for brunch, a Bloody Mary skewer, or even as a holiday food gift!

My friend, Rhiannon  and I recently hosted a Sunday Fun Day brunch. I knew this bacon had to be included on the menu especially on a skewer at our Bloody Mary bar. As soon as Rhiannon tasted it, she said this will definitely get you a husband and so the name was born!

This is a baked bacon recipe, so you’ll be using your oven. It’s the best way to cook bacon, and it’s very easy to do!

After you bake it, you’ll let it cool on a rack to allow the sugar to caramelize and harden for that perfect, crispy, candied texture.

Ingredients

  • 10 pieces thick cut bacon
  • ¼ cup brown sugar
  • ½ teaspoon fresh cracked black pepper
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon garlic pepper
  • 2 Tbsp honey

Instructions

Place the oven rack on the center rack. 

Preheat the oven to 350 degrees Fahrenheit.

Combine brown sugar, and seasonings in a bowl. Set aside.

Place foil on a 13×9 baking sheet. 

Add bacon in a single layer.

Cover both sides of pieces of bacon with the brown sugar mixture.

Drizzle honey over top. 

Bake in a preheated oven on the center rack for 20 minutes, 

Remove bacon from oven and place on cooling rack to dry.

Bacon Wrapped Jalapeño Poppers

These bacon wrapped jalapeno poppers are baked instead of fried! Who can resist fresh jalapenos stuffed with cheese, wrapped in bacon and baked to crispy perfection? Not me, that’s for sure. This is the ultimate party snack!

The jalapenos are sliced in half and the seeds and ribs get removed. Removing the seeds and ribs removes most of the heat from the peppers; if you like it spicier, leave some of the seeds and ribs in. The peppers are stuffed with a combination of cream cheese, cheddar cheese and spices. Then wrapped in bacon before baking in the oven. 

I like to serve my bacon wrapped jalapeno poppers with a side of ranch for dipping, but honestly they’re great as-is too.

Ingredients 

  • ½ cup cream cheese
  • ½ cup shredded sharp Cheddar cheese
  • ½ teaspoon paprika 
  • ½ teaspoon garlic powder
  • 12 jalapeno peppers, halved lengthwise, seeds and membranes removed
  • 12 slices bacon

Instructions 

Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.

Mix cream cheese, seasonings and cheese together in a bowl until evenly blended. 

Fill each jalapeno half with the cheese mixture. Put halves back together and wrap each stuffed pepper with a slice of bacon. 

Arrange bacon-wrapped peppers on the prepared baking sheet.

Bake in the preheated oven until bacon is crispy, about 15 minutes.

Keto Friendly Breakfast Casserole

Keto Friendly Bacon, Egg, and Spinach Breakfast Frittata Casserole is the perfect quick and easy make-ahead, meal-prep breakfast that is sure to please any crowd!

I love making frittatas; combining a bunch of ingredients that pair well together, whisking in eggs and then throwing in the oven to bake. This recipe is basically a LARGE frittata that is perfect to serve at any family gathering or brunch! It is also great to make on the weekend for meal prep! Then portion out your breakfast for the week and you just like that, breakfast is all taken care of!

This recipe is highly customizable, so you can change out the type of cheese, peppers and even the bacon.  You can make whatever combination you like, maybe sausage or ham instead of bacon. Simply use what you have on hand to make it easy!

Just follow these easy steps!

  1. Sauté the veggies and spinach.
  2. Preheat the oven to 350 degrees. 
  3. Create the first layer by adding the sautéed spinach and veggies to the bottom of a baking dish.
  4. Whisk the eggs and egg whites in a small bowl
  5. Pour over the veggies. 
  6. Sprinkle cooked, crumbled bacon and shredded cheese over the top. 
  7. Bake for 25 minutes.

  • 2 eggs
  • 1 1/2 cups egg whites – You can use 8-10 eggs if you don’t want to use egg whites.
  • 2-3 cups fresh spinach, roughly chopped
  • 6 slices bacon cooked and crumbled
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1/2 cup chopped red onion
  • 1/2 chopped green pepper
  • 1/2 chopped red pepper
  • 1 1/4 cup shredded cheddar cheese
  • salt and pepper to taste

Instructions

Preheat the oven to 350 degrees. 

Spray a 9×13 baking dish with cooking spray.

Place a skillet on medium-high heat. Add the chopped veggies (excluding the spinach) to the pan. Sautee for a few minutes until the veggies are soft.

Add spinach to the pan, and saute until slightly wilted. 

Add the veggies and spinach to the bottom of the baking dish. Spread the veggies throughout the dish.

Whisk the egg whites and eggs in a small bowl. Season with salt and pepper. 

Pour the egg mixture over the veggies.

Create an additional layer by adding the crumbled bacon and shredded cheese.

Bake for 20-30 minutes.

Remove from the oven. Allow to cool before serving

Green Bean Bacon Bundles

As much as I love steamed or stir-fried veggies, there is just something about roasted vegetables. The caramelization adds so much flavor! These green bean bacon bundles are no exception. They’re absolutely delicious and easy to make.  

Tender crisp green beans wrapped in bacon and tossed in brown sugar glaze, it doesn’t get much better than that! These are easy enough for a weeknight meal and make a fun side dish to a barbeque with friends and family!

INGREDIENTS

  • 1 ¼ lbs green beans 
  • 6 slices bacon cut in half, do not use thick cut bacon
  • 1/2 teaspoon garlic powder 
  • ¼ teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup butter melted
  • 2 tablespoons brown sugar
  • Cooking spray

INSTRUCTIONS

Preheat the oven to 400 degrees. Place the bacon on a sheet pan and bake for 7 minutes. Remove the bacon from the oven.

Trim the ends of the green beans. 

Bring a pot of salted water to a boil.

Place the green beans in the pot and cook for 2-3 minutes until just tender. 

Drain and put the green beans in a bowl of ice water to stop the cooking process.

Pat the green beans dry. 

In a small bowl whisk together the garlic powder, red pepper flakes, salt, pepper, butter, brown sugar and pepper. 

Pour the butter mixture over the green beans and toss to coat.

Wrap 6-8 green beans with a piece of bacon.  

Place the green bean bundles on a sheet pan coated with cooking spray.

Bake for 15-20 minutes or until bacon is crispy. 

Serve.

Roasted Brussel Sprouts & Radishes

Who knew that roasted radishes actually taste like roasted red potatoes! Seriously!
I had a bag of radishes I was worried were going to go bad so I did a quick Google search and learned roasted radishes are a healthy alternative for roasted potatoes.
So I grabbed the radishes, a bag of brussel sprouts, some of my favorite seasonings and bacon. I mean what doesn’t bacon go good with!
I couldn’t believe how delicious this came out! I definitely will be roasting radishes again!

Here’s how I had prepared them.

Ingredients

  • 4 slices Bacon, cooked
  • 1 Tbsp EVOO
  • 1 lb Brussels Sprouts quartered and outer layers peeled
  • 1 bunch Radishes halved
  • 4 strips bacon
  • ½ tsp Garlic Powder
  • ½ tsp Red Pepper Flakes
  • ¼ tsp Italian Herb Seasoning
  • ½ tsp Salt
  • ¼ tsp Black Pepper

Directions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Cook bacon and set aside.
  3. Toss the quartered brussels and halved radishes in a bowl with oil, seasonings, salt, and pepper and set aside.
  4. Drizzle EVOO over a baking sheet.
  5. Spread the brussels and radishes out in an even layer on the baking sheet.
  6. Bake for 20-30 minutes, until the veggies are tender on the inside and crispy on the outside.
  7. Chop the bacon and sprinkle on top of the veggies.
